Last week for a dinner party, I offered to bring an appetizer, hoping my middle daughter (who works for an NGO in China) would come to my rescue by email.

The same way she whips up a tray of bruschetta in a matter of minutes or a photo-worthy warm spinach and mushroom salad, she prompltly sent me a list of appetizers and how to prepare them.

My first thought was that I'd love to share the bounty with you, especially with this being the holiday season.

Roasted Red Peppers With Goat Cheese

  • Cut peppers into nice wide strips (not huge, just nice) make sure strips are covered in olive oil, and add salt and fresh ground black pepper and thyme. (add enough oil in pan as well so it doesnt get dry,)
  • Put in oven until roasted and the skin is a little blackened.
  • When still warm place some simple chevre goat cheese on top, plain or herbed
  • Thyme, salt, pepper all optional

Note: I used peppers of various colors. First I put them in a 400 degree oven for 5 or 10 minutes, then I turned on the broiler, but kept the peppers on only the second highest rack and watched them every 30 or 60 seconds. I removed them when they became a bit blackened. I brought this to the party in a decorative baking dish with goat cheese on the side (labor-saving). I used nothing but peppers and plain goat cheese and served them at room temperature. I worried that I'd overdone the oil, because we needed plates and forks, but it was a huge hit!

Parmesan Wafers (Fricos)

This recipe for Parmesan, Basil and Lemon Wafers comes from Giada De Laurentis and is easy and delicious. The link will give you details, but basically it's baked shredded parmesan cheese wafers. It can be served on it's own and goes especially well with any kind of vegetable soup.

Carmelized Onion Tarts

  • Buy frozen pastry cups and bake according to directions on the package
  • When done, carefully remove the caps of the cups (can use or not)
  • While pastry is baking, use half olive oil and half butter to caramelize sliced yellow onions
  • Add a little salt and pepper
  • Fill cups generously with caramelized onion and top with Arugula.

Looks elegant, but so easy. Yum!

Figs Stuffed With goat cheese & Wrapped in Prosciutto

  • Cut figs in half length-wise. You may need to cut out a little of inside.
  • Fill with goat cheese (plain, not herbed).
  • Wrap with Prosciutto
  • If necessary, use toothpicks to help hold it together.

Done!

Tomato Bread, Manchego Cheese Optional

  • Get good tomatoes and a great rustic bread like sourdough.
  • Cut bread into slices (not too thin).
  • Toast up the bread in a little bit of olive oil in a pan (don't want to saturate it in olive oil, just want a bit of olive oil for toasting and slight color). 
  • Season with a small amount of salt and pepper. (Can skip the salt if using the cheese, which is salty.)
  • Cut tomatoes (roughly cut away skin) and blend to a nice pulp (not too liquid-y, just for a spread) in a blender or food processor
  • Add a touch of olive oil into the mixture, and a little salt and pepper. (Again you can skip the salt if using cheese,)
  • Spread tomato mixture onto the bread.
  • Top with slices of manchego cheese (optional) but recommended.

You may want to cut this into squares for appetizer-sized servings and then add the cheese. I always worry about food being over-salted; since salt is added twice, go easy, though my daughter might tell you otherwise. I'm only the sous chef in our home.

Nigella Lawson's Sherry-Glazed Chorizo Coins

I recently heard Nigella Lawson on NPR. This appetizer sounds delicious and takes just 5 minutes to prepare!

"You slice [chorizo sausage] into coins, and then cook [it] until it slightly colors and scorches — and then at the last minute I splash in some sherry."

Lawson likes the "extra sweet note" cream sherry provides. She further notes, "The sausage is lightly glazed by the sugar in the sherry, and glistens attractively on the appetizer tray." She calls it the "unholy trinity" of sugar, salt and fat.

I agree, the appetizer in the photo looks good. I chose that photo, because I thought readers could copy the idea of how the cucumber is skinned and the topping looks like a regular bruschetta or maybe salsa. Great if you'd like to share one of you're recipes.
