Simple Easy Pancake Recipes: Homemade, healthy pancakes!  

What can be better on an cold morning than homemade pancakes? With these simple and easy pancake recipes, you have dozens of choices for a healthy, hearty, and delicious breakast any time of year!

Simple Pancake Recipes: Basic Wholegrain Pancakes (adapted from a 1981 cookbook, Whole Foods for the Whole Family.)

Ingredients:

  • 2 cups milk or soy milk
  • 1 to 3 eggs (substitute 2 egg whites for one egg, if desired)
  • 2 tsp baking powder           
  • ÂĽ tsp salt (optional)
  • 2 cups flour: any combination of whole wheat, rye soy, oat, millet or buckwheat

Optional:

  • Up to ÂĽ cup honey, maple syrup, molasses or brown sugar
  • Up to ÂĽ cup vegetable oil or melted butter

Directions:

In a large bowl, place milk eggs, baking powder, salt and optional honey and oil. Mix well. Add flour and/or grain, beating only until large lumps disappear. (Batter may be made night before and stored covered in the fridge.)

Cook on a lightly greased skillet or griddle over medium-high heat (375 degrees). Turn when small bubbles appear. Makes about 16 four-inch pancakes.

Buttermilk, Sour Milk or Yogurt Homemade Pancakes

Omit milk and baking powder from the above basic recipe. Add 2 cups buttermilk, sour milk or yogurt and 1 teaspoon baking soda. Yogurt may need a little thinning with milk or water. Sour milk can be made by adding 2 tablespoons vinegar or lemon juice to 2 cups milk.

Orange Pancakes

Use 2 cups orange juice in place of buttermilk.

Tasty, SImple Pancake Recipe Additions: Add any of the following to the basic recipe:

  • 1 t. vanilla
  • up to 2 Tbsp nutritional yeast
  • 1 t. grated orange peel
  • extra dry milk powder
  • Âľ cup unsweetened applesauce
  • ½ cup unsweetened, shredded coconut
  • ÂĽ cup carob powder
  • up to 1 tsp ground cinnamon or nutmeg
  • up to 2 tsp ground coriander
  • 1 cup blueberries or other berries
  • ½ cup chopped nuts or seeds
  • ½ cup chocolate chips
  • up to 1 cup raisins, dates or other dried fruit
  • 1 cup chopped apples or other fruit
  • 1 Tbsp protein powder
  • ½ grated cheese

Pancake Toppings

  • Butter
  • Maple Syrup
  • Applesauce
  • Yogurt
  • Sour Cream
  • Whipped Cream
  • Mashed fruit
  • Bananas
  • Cottage Cheese
  • Warm Honey
  • Peanut Butter
  • Fruit butter
  • Homemade jams or jellies
  • Cream Cheese
  • Ricotta Cheese
