Chinese New Year Recipes: Tofu

Cut a scallion on the bias into small pieces. Rinse one cake of firm tofu and microwave on high for one minute or heat gently in the oven. Cut tofu into pieces 1/2  x  1 x 1 ½ inches. Sprinkle with scallion, 2 tsp sesame oil and pinch of salt. Sesame seeds optional.
