Dessert recipes often get neglected by those of us who focus on the rest of the meal and then grab some ice cream or sorbet for dessert. As for weight, some of these dessert recipes are diet-friendly. Others throw caution to the wind. I love a great dessert, but I hate to feel full; I place a high value on physical comfort. So when faced with a bowlful of calories, I can be content with a small portion of deliciousness. See the last slide for additional sweet recipes.
We figured out this dessert recipe for coconut rice with mango during a visit to my daugher's favorite dessert cafe in China.
Prepare sticky rice ahead of time and chill. Also chill a can of coconut milk and one mango for every two or three servings.
Scoop some sticky rice in each bowl and add coconut milk (portion size is up to you). Top with cut up mango and a dollop of mango sorbet. The original dish calls for black rice, which gives it a more exotic look. We buy ours at Whole Foods.
