For a worrywart like me, putting together an easy, healthful dinner menu, is an antidote to worry. Even when I'm making dinner for one, as I did with the recipes in this slideshow, I relax and enjoy the cooking as well as the food. Each slide offers links to recipes for substitution options. Lately I've been eating this salad every day: arugula, sliced pear, goat cheese and pine nuts. For the dressing, I put into a jar and shake: olive oil, apple cider vinegar, a dollop of honey and the juice of a lemon. Adjust proportions to your taste.
I just read a Food Network pizza idea that uses a similar combo: sliced grapes, arugala and blue cheese. Yum!
