Another name for this could be Easy Recipe for Roast Chicken Soup. I had a wonderful organic chicken in the fridge and all the vegetables for making chicken soup for company. With the mild weather, I decided not to make the soup. So a few days later, I cut up the vegetables and roasted them with the chicken for a delicious "roast chicken soup." Easy Recipe for Roast Chicken: Pre-heat oven to 425. Cut up in any proportion you wish and toss with enough olive oil to lightly coat in a roasting pan: yellow onion, parsnip, carrots, and celery. I added a handful of whole garlic cloves and some new potatoes.
