Family-Friendly Healthy Summer Snack Recipes

 

When friends visit with their children and grandchildren I worry about serving something the kids will love and the parents won't object to. It is important to strike the balance between health and great taste. These fun recipes that everyone will enjoy have been created by Nicole Selinsky, Nutrition Director of Camp Pocono Trails where children can have a lively summer camp experience combined with weight-loss programs.

Homemade Salsa Recipe

 
Combine the following and serve with low-fat baked tortilla (corn) chips and/or fresh cut-up veggies:
  • 1 cup fresh tomatoes, diced
  • 1/2 cup corn kernels, fresh or frozen
  • 1/2 cup onion, diced
  • 1 tbsp. jalapeno peppers, chopped
  • 2 tbsp. lime juice
  • 2 cloves fresh garlic, finely diced
  • Tip: Jalapeno seeds can burn when you touch them, use plastic bags to protect your hands.
