Recipe: frying potatoes, smashed, lemon, parsley

Here’s an easy recipe for delicious fried potatoes. The lemon in the dressing adds a wonderful zing to the dish. Thanks to Giada de Laurentiis whose recipe I adapted here and thanks to my middle daughter for all the fun and fabulous eats in our kitchen! Frying Potatoes: Boil First

Cover small new potatoes in a pot with cold water and bring to boil. Cook over medium heat for 20 minutes or until tender. Drain potatoes and air dry for around 5 minutes.
